Scrumptious Pumpkin Muffin Recipe

Pumpkin, the flavor of Fall

The season would be not complete without Pumpkin spiced treats!

In celebration of National Pumpkin Day, instead of showcasing stenciled cookies, I am going to share my favorite recipe for baking up moist and delicious Pumpkin Muffins. Lookout for the secret ingredient!

Scrumptious Pumpkin Muffins

Ingredients:

  • 1/4 cup butter, softened
  • 1 1/4 cups white sugar
  • 2 eggs
  • 1 cup canned pumpkin
  • 6 ounces cream cheese, softened
  • 1 3/4 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground cloves

Directions:

Preheat oven to 350 degrees. Line muffin tins with your choice of wrapper.

Put cream cheese, butter and sugar in mixing bowl. Cream together well. Beat in eggs, one at a time until blended. Then mix in pumpkin. Set aside pumpkin mixture.

In another bowl combine flour, baking powder, baking soda, salt, cinnamon and cloves. Stir until thoroughly mixed. Add this dry mixture, all at once, to the pumpkin mixture. Stir until just moistened. Pour evenly into muffin tins. 

Bake at 350 degrees for 20 - 25 minutes (for regular sized muffins) or until inserted toothpick comes out clean. 

Let cool. Enjoy! 

*Optional: Stir chocolate chips or chopped walnuts into the batter. And once cooled, dust with powdered sugar!
